1999 pontiac grand am gt engine intake manifold removal?

im removing old garbage pontiac gaskets cuz coolant leaking....i pried intake manifold off...my gaskets horrible..now how remove bolts between push rod springs?? there holding head in place, removed 4 on outside cant out..my other question torque supposed on bolts when screw them on? gaskets brands?...its alot of work...but im doin it! other tips??
